The Plan

I have returned from the grocery store. They did not have wonton wrappers. I instead purchased spring roll wrappers. I will see how that turns out.
My course of action for the stuffing is to make a ricotta and queso fresco blend. I was going to use cotija but they only had one giant five dollar bag at the store. Also I have purchased some frozen spinach to use in the cheese blend. For the sauce i want to do a lemon burre blanc with poblano. I purchased some smoked spanish style chorizo and that will be plated with the ravioli.
That is my plan I will post later how it came out and a full recipie.
